What is the Love & Lemons Cooking Club?
The Cooking Club is a delightful way to engage with the Love & Lemons community. Each month, a new recipe is selected, and participants are encouraged to recreate it, share their experiences, and comment on the recipe’s blog post. A lucky winner at the end of the month receives a prize!
For April, we kick things off with our delicious chickpea salad recipe, perfect for welcoming spring. Here’s how to join the fun:
How to Participate in the Challenge
- Each month, a seasonal recipe will be chosen. Make sure to sign up for our email list to get notified.
- Prepare the selected recipe during the month.
- Leave a comment on the blog post for the challenge recipe by the end of the month. Deadline: April 30!
- For a bonus entry, email a picture of your dish to cookingclub@loveandlemons.com.
- Another bonus entry can be gained by sharing your photo on Instagram with a tag to @loveandlemons and using the hashtag #loveandlemonscookingclub.
The Prize: A $100 Whole Foods Gift Card!
At the end of the month, a winner will be selected at random, and their photos will be featured. This month’s prize is a $100 Whole Foods gift card.
Additionally, for every entry received, we will donate $1 to No Kid Hungry.
This Month’s Recipe: Chickpea Salad
Our chickpea salad is vibrant and packed with flavors, including:

| Chickpeas | 1 can (15 oz) |
| Pickled onions | 1/2 cup |
| Lemon juice | 2 tbsp |
| Fresh herbs (parsley, mint) | 1/4 cup each |
| Olive oil | 2 tbsp |
This salad is versatile—feel free to customize it with different herbs, veggies, or even add feta cheese. Just remember to wait to add the mint leaves until right before serving!

- Comment on the blog post by April 30.
- Email a photo of your creation for a bonus entry to cookingclub@loveandlemons.com.
- Post your photo on Instagram, tagging @loveandlemons and using #loveandlemonscookingclub.
- Sign up for our email list for next month’s recipe!
The winner and photos will be announced in early May!
Last Month’s Recipe Highlights
Last month, we created a delicious breakfast casserole, here are some variations that participants tried:
- Irais substituted broccoli for peppers and added oregano and tarragon.
- Adrienne included sweet potatoes and leeks.
- Kim opted for roasted root veggies in place of potatoes.
- Melina doubled the spinach and topped with sliced tomatoes and feta for a Mediterranean twist.
- Kristin turned leftovers into mini breakfast tacos, a great idea!
