Sesame soba noodles with avocado, snap peas, radishes, edamame, and herbs

Use 100% buckwheat soba noodles or rice noodles, ensuring your tamari is gluten-free.

Dry soba noodles
Radishes
Avocado
Blanched snap peas
Edamame
Fresh herbs (mint, cilantro)
Sesame dressing

Last month, participants enjoyed my chickpea salad, a vibrant spring dish. Here are some creative twists shared by members:

  • Sinclair: Made it a pasta salad by adding rotini.
  • Jennifer: Mixed in farro, tricolor quinoa, and feta.
  • Robyn: Doubled the dressing and added artichoke hearts.
  • Emiley: Used peppers and carrots instead of tomatoes.
  • Shannon: Added pickled cauliflower!
