What is the Love & Lemons Cooking Club?

Our Cooking Club is a fun way to bring together the Love & Lemons community. Each month, we select a recipe that you can cook and comment on. At the end of the month, one lucky winner will be chosen to receive a prize!

This month, we’re kicking off with a delightful cowboy caviar recipe. Here’s how you can participate:

  1. Each month, I choose one seasonal recipe—sign up for our email list to be updated.
  2. Make the featured recipe during the month.
  3. Leave a comment on the recipe’s blog post by the end of the month. Deadline: June 30!
  4. For a bonus entry, send a picture of your dish to cookingclub@loveandlemons.com.
  5. For another bonus entry, post your photo on Instagram, tagging @loveandlemons and #loveandlemonscookingclub.

The Prize: A $100 Whole Foods Gift Card!

At the end of the month, a winner will be chosen randomly, and we’ll feature some of your photos! This month, the prize is a $100 Whole Foods gift card.

Additionally, for every entry, we will donate $1 to No Kid Hungry.

Why Cowboy Caviar?

As summer cookout season is here, we celebrate with cowboy caviar—a delicious black-eyed pea dip, akin to a hearty pico de gallo or fresh corn salsa. This recipe not only works as a refreshing salad but also develops a deeper flavor when prepared ahead of time, making it perfect for lunches or picnics.

This particular version combines:

  • Creamy black beans and black-eyed peas
  • Juicy tomatoes
  • Crisp bell peppers
  • Savory red onion
  • Cilantro and avocado
  • Sweet corn

Helpful Notes:

  • This recipe is both vegan and gluten-free.
  • To maintain the avocado’s freshness, add it just before serving.
  • Feel free to use fresh or frozen corn. For fresh, consider boiling, grilling, or even chopping it raw!
